loved the final product - always used to use the larger casings - these are a bit more work just because it takes more casings, but they make perfect size rolls to either eat or give away...
Casings stuffed great, they have great strength, and they are easy to work with. The problem is the taste - the casing tasted almost like soap when we took sticks out of the smokehouse - it is something that is on the outside of the casing - I verified it by taking a new one and licked it to find the source. Loved them right up until the end - and that is the biggest thing - taste - it left an aweful one in my mouth.
These casings are perfect for venison summer sausage. Because of the smaller size (1 1/2 inch vs 3 inch), it seems like you can taste the smoke better throughout. You also don't need to cut them up to freeze, we just wrap them whole and there is MUCH less freezer burn loss. The casings bloom llike a dream too, no sticking to the sausage.
