    "I just tried this kit made from a Mule deer doe. We made 25lbs of sausage in our kitchen oven. It turned out great.

    I only wish that it came in a smaller kit for about 15lbs. I also wish the instructions gave a time estimation for cooking. It took us about 7 hours to get the meat to the proper internal temp so we finished at about 11pm and were ready for bed. But now we know for the next time.

    Beer salami is convenient but lacks enough pepper, October 28, 2009

    "Everyone's taste is different: my daughter does not like any kind of spicy food, and she likes this salami; my wife and I describe it as pretty bland. If you like a "normal" amount of pepper, consider adding about 250 additional peppercorns or an equivelent amount of ground pepper - this should yield one peppercorn per slice of 1/4" thick slice of salami.

    Consider slow cooking a small batch to test seasoning before processing an entire batch. Do not heat any product with nitrates above about 350 degrees or so as the nitrate can convert into a harmful chemical.

    Unless your smokehouse will allow you to hang a 20" long salami casing, plus an additional 2-3" for string, you may need to cut the casings in half before stuffing, doubling the number of ends to tie.

    You will probably want hog ring pliars to make this product, or you will be tying a lot of casing ends! You will also want to consiger pre-tied end strings, or cooking twine to make the additional hanging loops you will need if you cut the casings in half to facilitate hanging in an average-sized home smoker.

    The instructions are incomplete and confusing. For example, one sentance reads "Set time for 55 minutes," but the context does not help understand for what you are setting the timer.

    After thawing your boned and trimmed elk or venisen, allocate about 8-10 hours to make a 25# batch.

    "Should have done this long ago, could have saved thousands.

    Follow the directions exactly, you'll get a perfect product
    every time. You can add tbl spoon crushed black pepper per
    1/2 batch, +1/4 tsp garlic powder for different flavor. This is like the old school product butchers used to do with the mustard seed...It's awsome...try putting mesquite smoke on it
    for a sweeter finish.

    Bottom line... I've tried a few kits...this is the best that I have
    found.

    "I used one of the pepperoni kits and made a half batch ( 12.5 lbs.) I used half of the cure packet and after smoking the batch and sampling a piece the salt content was over powering. I followed the instructions to the letter but still way too salty. I will use half as much next time. Other than that great flavor and I'll try again."

    "I have been using the Cabela's brand sausage kits for more than a few years and have found all of them to be of superior quaility. My only dissappointment is that now the Cabela's brand kits are designed for making 25# batches of sausage. The original kits were set up to allow the customer to make two 15# batches. This was much more convenient, as 25# of sausage is too much to make at one time for the average size family. I wish Cabela's would go back to the original packaging. My star rating above reflects the dissappointment in the packaging portion, not the flavor of the sausage. The taste is still excellent."

    "This was our first year of serious processing. We set ourselves up with all the meat processing tools from Cabela's (grinder, mixer, stuffer) and then purchased the kits. The equipment worked well and kits were easy to use. It was a simple step by step process and the results were phenomenal. Brats, summer sausage, and snack sticks all have received rave reviews from friends and family. We are already planning for what we will make next year!"
