"These casings are perfect for venison summer sausage. Because of the smaller size (1 1/2 inch vs 3 inch), it seems like you can taste the smoke better throughout. You also don't need to cut them up to freeze, we just wrap them whole and there is MUCH less freezer burn loss. The casings bloom llike a dream too, no sticking to the sausage."
