"I gave it five stars because I couldn't find anything to complain about. The meat (soft rump roast for jerky, about a 1/4" thick) sometimes wants to crawl back in, or be drawn back in behind the slicing wheel, but thats easily overcame by grabbing the meat with your left hand as it passes through the slicing blade, not allowing the meat to sit idol. When the meat isn't removed right after slicing, it tends or can be drawn back in behind the moving blade. I imagine that a harder meat, such as salami, wouldn't or couldn't be drawn back in. Seems to be a very solid unit. That has been our total experience to date."

BAD Cleaning: Takes 15 minutes to disassemble (screw driver, Allen wrench, little pieces to keep track of), wash and reassemble. You will never use this for one meal.
Cutting: Thin sliced meats get caught behind the blade and destroyed and the next slice won't pass through correctly. We end up reaching around the back and removing each slice by hand – which really slows processing down.
BOTTOM LINE There's a reason the 5 star reviews are generally from deer-processing jerky makers. The cleaning inconvenience will keep you from using this machine for single meal food prep; it's only worth the hassle if you're doing big jobs."

"I have other Chef's Choice products, so when purchasing this product I expected high quality. Prior to using the slicer for the first time I took it apart to clean it. The cutting blade weights about 3 pounds and is razer sharp (you really need kevlar gloves to clean the slicer). After putting the slicer to use... I Loved it!"

"From everything I have read about these non restaurant style slicing machines I was a bit worried about buying this one.
Just one spot where there is a seam that there is a bit of a gap where the thing comes together that is difficult to clean. One screw takes off the blade cover, three screws takes off the blade. Haven't tried to take off the handle section.
Problems I have encountered. Even the ones in the restaurant where I used to work would suck the meat into the blade between the blade and the cover, so this isn't anything new, but when I was slicing turkey breasts for sandwiches, I got small pieces of bird all over the place. In my hair, on the table, on the floor. Made nice slices, but my God it made a mess.
I need to try some onions on it and some beef for italian beefs and see how it does with M to MR beef. It might be coming back.
I would recommend this to a friend, but not before I explained the issues that this machine does present."

"After reading some of the reviews on the slicer I was a little apprehensive about purchasing this unit, stories about how difficult it is to clean almost stopped me from buying it. I found it very easy to clean and get put away. This slicer is idiot proof and does a great job in making paper thin slices, even on homemade bread. As faw as power it has more than enough. I would highly recommend this slicer. It is well worth the price. Not to mention all the great help I get every time I set foot in the Post Falls Cabela’s. It shows how well trained the staff is, they are able to answer all my questions. Thank You Cabela’s"
