"Ordered it on saturday, bought a 7.71 lb pork shoulder roast on tuesday, smoker arrived wednesday afternoon. I put it together wednesday evening then rubbed the roast with seasoning and let it sit in the fridge ovenight. Thursday morning I fired it up, added wood chips and some lump charcoal, put the roast on at 10 am and was enjoying the fruits of my labors that afternoon by 5 pm. It was a cool breezy day but with the jacket, it held at 225 degrees with no problem. Everything worked perfectly.

"Have had my smoker for a year and really love it. Moved the water pan up an inch by drilling new holes which makes it easier to put more wood in the pan. Also use my propane torch to get the wood smoking when I first start up. Maintains a constant temp."

The easy way to barbecue, June 30, 2009

"As a previous reviewer wrote, I also read several bad reviews that this smoker is not getting up to temp. I used my first one for 6 years and now have a new one this year, and have given the unit as a gift as well.
The temp problems that some are having are curious to me because I get mine to any temp needed without problem.

I load mine with a small load of charcoal and set thermostat to just above medium to light. When the temp climbs above 300, then the charcoal is lit and so I back the thermostat down to near low. Then I'm done except for eating, cause it maintains 200-250 for 4-6 hours or more. I've done this in 90 degree weather and in 10 degree weather, using a bit more charcoal and slightly higher settings in the cold weather.

I don't doubt the reviewers experiences, but I am suspicious of electrical power (ext cord) or possible a defective thermostat. Use a special beefy extenstion cord if one is required.

"i've read some recent reviews and was surprised with the complaints. This is a good basic smoker. Plug it in and follow the cooking instructions. I always use the blanket and it will easily go to a 300 temp. Maybe that is the difference between my experience and other reviewers who complain about temp. 300 is more heat than you need to smoke. Take it to 300 then turn it down to 225 and let it work. Kansas City is known for bbq and we always say--slow and low. I have lots of friends with traditional and/or gas smokers. My smoked meat can hang with theirs every time.

7 hours using the aforementioned technique will take a 6lb pork butt from room temp to deliciousness, and you only mess with the temp once. 5hrs for a 4lb brisket.

Just received the smoker, June 2, 2009

"We just assembled and used the smoker for the first time on Sunday. Unlike other reviewers we got lucky and all the holes and screws lined up! I agree with others that the temp. appears to not get over 200. But using a recipe for pork butt, it cooked in the time it was supposed to....so I think the temp gauge is just defective and the unit works OK. OR the gauge is too far from the element to read temp accurately. Perhaps it should be in the middle of the unit, instead of the top. Although we had it on high the whole time, but it was a very windy day so I think weather has an effect. I would suggest using a meat thermometer and don't rely on the external gauge.
My real complaint is that the chip tray is on bottom, so to feed it more wood chips, you have to work in the dark so to speak. the water tray is above it and in the way, so it's hard to add chips - and you can't see where they are. I also found that "stoking" the chips kept the smoke going when it was dying out, just like in a fireplace. If anyone has better ideas, please post them b/c we're just starting out and would like advice. If things get better/worse as we go along, I'll post another review.

"I have returned this smoker 5 times in 1 1/2 years. If Cabelas wasn't so good about returning their products I would not own this smoker. My first smoker could not pass 100 degrees on a 70 degree day with a insolated jacket. My second smoker could not be assembled due to the holes not lineing up. My third smoker's paint pealed all over inside on the second use. Fourth smoker - poor welding so it fell apart while smoking - BIG MESS. Fifth smoker - messing holes for the handles and grill racks. I am on my 6th right now. If I could find another ELECTRIC smoker around the same price with a controlable temp I would buy that instead, but for now as long as Cabelas keeps replacing it, I'll keep trying it. I've got to get a good one soon right?"

"Works good, easy to use but won't get over 200 degrees to smoke for me and the unit never cycled off/on. Most all smokers need between 225 & 250 to work really well. For the price its ok but if you are serious about smoking you would be better off paying more and getting one that looks like a small fridge."

"I've had other smokers and this one is as good as most. The legs raise it to a comfortable height and it hits temperatures high enough to cook / smoke.
Assembly was easy but some fabrication tools were needed. A few of the "threaded" parts weren't. Having a tap and die set saved me from calling for replacement parts. Also, the brackets for the shelf were misaligned. A padded vice and a rubber mallet straightened out the problem <smile>.
Fortunately these minor problems are easily overcome with basic skills and this smoker is well worth the effort.

"I have bought products from Cabelas for years, and have always been satisfied. I had an old basic electric smoker that worked great for years. I received this one as a gift and I was shocked at the poor quality. While it was packaged well and wasn't damaged, the actual quality was by far the worst I've seen from Cabela's.

The finish on the main smoker body had multiple defects on every piece. Pieces were missing paint, and various other defects in the paint.

I wanted to at least try it out a couple times before returning it, but sadly, that hasn't helped it's cause any. I followed the instructions of no extension cords on a circuit with nothing else on it. The smoker is simply underpowered. Yes, smoking isn't a fast process, but even on high, on a 60 degree day, this thing takes far longer than other smokers to do anything. My other smoker could sit in the snow at Christmas and have anything smoked well in 4-8 hours. I'm not sure this unit could even melt snow.

I will be returning this product to Cabela's very soon.

"I bought this smoker on the recomendation of a friend. I like the ability to easily control the temperature. I live in Alabama and have several pecan trees in my yard. We have high winds during storms, and lots of small limbs fall during each storm. I gather these small limbs (little finger thick), cut them into 2-3 inch lengths and use them for smoking. It makes delicious pecan flavored chicken and pork shoulder.
I would prefer the chip pan to be a bit more substantial, but overall it is a good product.

"The temperature could remain steady and it was maintained 120C' steady.
Therefore, I've put 13 more charcoal for high temperature and it could have maintained 130~150C' for 5hours.
It is completely satisfactory temperature as a smoker and BBQ's functions simultaneously.

It would be better to have a air control device at the underneath and one more charcoal plate.
It is very useful machine.

"I am by no means experienced with smoking meats but my first two experiences have been excellent. It has been cool so the temperature has ranged in the 200-250 degrees on High(this should rise as temperatures warm). This actually has worked well for smoking. I have no real complaints. It does require more time then I was expecting for assembly, I believe there was one fastener issue but all in all it has been a pleasant experience. I was impressed with how heavy duty the heating element and control which is the heart of the unit. The wood chip tray is also right in the element ring allowing good heat to the chips for smoking. I am very pleased."

"This smoker does a great job of smoking and grilling. I find it works better if the chips are dry and not soaked. Easy to put together and use. Suggest not using an extension cord, the heat seems to get hotter when plugged straight into an outlet and with dry chips."

"I received this smoker as an early Christmas present and have used it twice already. I found the heat regulation to be nearly perfect in spite of the cold weather conditions. I did place the unit in my garage so that I would not have to use an extension cord. It did take me a while to get the heat setting low enough to use a smoker but once set the temperature was easily maintained. About the only negative opinion I have of the unit is that the side handles are connected to a removable wall. If you need to move the unit while cooking it is possible to lift the cooking trays."

"Years ago I had a charcoal smoker but it didn’t last long, I didn’t like baby sitting and the heat was too hard to regulate. I gave up. Recently a guy I work with smoked some trout for me. I was hooked. I used to either release or give the trout away if someone asked. No more. When I asked what kind of smoker he had, this is what he recommended. I used it yesterday for the second time, while we were getting 10 inches of snow. The neighbors think I’m nuts but I was in rib heaven. I did buy a blanket and recommend it if you live in the north, but I set the heat control and walked away, no baby sitting. Turkey and Brisket are next.
