"Just made 15lbs of Hi-Mountain Summer Sausage, and it is delicious. Followed the directions and it turned out very well. Only change I made was I added some liquid smoke for some of the water since I used my oven to cook them in and not a smoker. I'm gonna have to ration out this stuff or it will be gone in a week or so. Scrum-diddly-yum!"

"great sausage! some other reviews said if the full amount of seasoning was used it was too mild and to cut back on the amount of meat. I followed the instructions and used the full amount of meat and the result was great sausage! 1st time sausage maker but can't go wrong following directions. I made a half batch of 12 pounds with 4 pounds straight bratwurst, 4 pounds with home canned apple sauce and apples added, 4 pounds with green peppers, garlic, and pepper jack cheese. All were great. Smoked the garlic pepper sausage and the rest was fresh. wow, can't wait to make other types of sausage..."

"The polish sausage was ok mixed 50/50 venison /pork butt the brats came out better same mix% if you have to use 80 pork fat to 20 % venison whats the point if your a hunter. opening the hog casings for rinsing was the most time consuming part"

"Easy to follow directions. I did mine with the smoker and it turned out a nice product, better than any I've gotten from a processor. That said, as mentioned in other reviews, it is VERY mildly seasoned. My kids love it but I'll definately add a lot more extra spices for some kick after we get through the first 15lb batch."

"I have used all of the sausage kits several times and have found them to be better if you either add more seasoning or cut back on the meat for the recipie. One thing that I do is substitute 3oz's of liquid smoke for the water in mixing a 15 lb. batch and cook all mine in the oven. It is easy to use and liked by all, just a little too bland."

"I bought this last spring but it wasn't until this fall before I made sausage. First thing is have a way get the exact weight of your meat. Do not guess, this kit makes 30 pounds of sausage, That is a lot of meat!! Start off with 15 pounds and work from there. I used all venison / no pork and added fat (20%)from my deer. I started with 16 pounds. Soak your casings for two hours before you use them.
I live in Ohio and our deer are well fed. I have processed my own venison for the last 40 years. All of the Midwest deer have very good flavor. So, the old wives tail that the deer fat has a bad taste is wrong. If they live off pine trees or sage brush find a new place to hunt.
I used an electric smoker and followed the instructions. The only thing I found at fought was there was no string in the kit to tie the finished casing off. I used some 30 pound Fireline and it work great with an A&P knot. If you do not know what an A&P knot is ask your butcher. It is a granny knot with an extra twist, go around twice. Use a meat probe and cook to 170 degrees. I hang my casings and poke a hole in the bottom so the extra fat will drip out.
