The ceramic wheels sharpen blades at 22.5° per side for a precision-machined edge and optimal performance, sharpness and edge retention. They also remove less metal during the sharpening process than nonceramic models. Nonslip rubber feet. Intended for use on alloy, carbon and stainless steel knives with a flat grind on both sides. Do not use on ceramic-blade knives, Asian-style kitchen knives or knives with a grind on just one side of the blade.
