I used these on summer sausage; and they are the ones you want for summer sausage ( I have used smaller ones before with defeat). If you are stuffing sausage alone; then fill up the casing almost to the top; then twist the end; and it will be easier to put the hog ring on. If your still struggling; then fill up the casing; and use a piece of twine - put it around where you want the ring to go and pull tight; twist the sausage a bit and then put on the ring.
