I have used these knives for years, they have never let me down. I got the idea from my local grocery store since all the meat guys use them I figured I would as well. The knives do very well on deer meat, I have never tried them on any type of fish.
I bought two of these knives, have used them cleaning salmon and halibut. Grip is good and I like the blade size and shape. Great knives for the money. Not yet enough use to comment on how well the edge's hold up.
